For starters, are the crackers meant to be eaten as a snack or as a meal? If they are meant as a meal they are hamotzi, see what I recently wrote regarding pizza. If they are meant as a snack they are mezonos, unless you personally intend to eat enough to make a meal, in which case you would say hamotzi.

In general, if there is doubt in halacha if the proper beracha is hamotzi or mezonos one would say mezonos, as the Taz in OC 168 writes that mezonos is a safek berachos l'kula and includes hamotzi. However, a doubt only refers to a case where one has learned the relevant halachos and asked a Rav and the issue is still unresolved. Otherwise there is no dispensation to be lenient.
