Mishna Berura brings a machlokes if one must drink a hot beverage in the minimal time span that one would normally drink a revi'is in or if it is sufficient to drink it  in the normal time span for sipping hot beverages. He concludes that one should not say a beracha achrona if it was only sipped, but he concludes that the best way to avoid the problem is to leave over a revi'is of the coffee etc until it cools enough that it you can drink it at one time, and then a beracha achrona is recited. However, some allow one to recite a beracha on any hot liquid that was sipped normally, and one who follows that opinion has many Poskim to rely on.
