If someone doesn't know the Halacha it is not considered a safek berachos and he must ask someone who does know, he may not even say shehakol in doubt. Safek berachos applies either when there is an unresolved machlokes in the Poskim or where the facts of the issue are unknown. Therefore, while one should be machmir l'chatchila, it is accepted that the shiur k'zayis in Halacha is like R' Chaim Naeh. With mezonos it is more complicated because many Poskim require a k'zayis of flour, not cake. But if you don't know exactly how much you ate, you would not say a beracha acharona.
